Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.33 cup granulated sugar
  • 6 tbsp unsalted butter melted
Peanut Butter Filling
  • 8 oz cream cheese softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream cold
Chocolate Ganache
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup heavy whipping cream

Method
 

  1. In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press firmly into the bottom and sides of a 9-inch pie dish. Freeze for 15-20 minutes.
  2. Whip 1 cup of cold heavy cream until stiff peaks form. Set aside.
  3. In another bowl, beat softened cream cheese and peanut butter until smooth. Add powdered sugar and vanilla, beating until fluffy.
  4. Gently fold the whipped cream into the peanut butter mixture until fully combined. Pour into the chilled crust and smooth the top. Refrigerate for 1 hour.
  5. Heat 1/2 cup of heavy cream until simmering, then pour over the chocolate chips. Let sit for 3 minutes, then whisk until smooth.
  6. Pour the chocolate ganache over the pie, spreading it to the edges. Chill the pie for at least 3-4 hours before serving.

Notes

For perfectly clean slices, run your knife under hot water and dry it off between each cut. Keep refrigerated.
