Loaded Oreo Rice Krispie Treats

Ingredients
  

Base Mixture
  • 6 tbsp unsalted butter
  • 16 oz mini marshmallows divided use
  • 1 tsp vanilla extract
  • 5 cups Rice Krispies cereal
  • 25 Oreo cookies roughly chopped
  • 0.25 tsp sea salt
Toppings
  • 0.5 cup white chocolate chips
  • 2 tbsp heavy cream
  • 0.25 cup dark chocolate syrup or melted dark chocolate

Equipment

  • Large Pot or Dutch Oven
  • 9x9 Baking Pan
  • Silicone spatula
  • Parchment paper

Method
 

  1. Prepare a 9x9 inch pan by lining it with parchment paper and lightly greasing it with butter or cooking spray.
  2. Roughly chop the Oreo cookies, keeping some large chunks for texture. Set aside.
  3. In a large pot over low heat, melt the butter completely.
  4. Add 3/4 of the marshmallows, salt, and vanilla to the pot. Stir constantly until completely melted and smooth.
  5. Remove from heat immediately. Fold in the Rice Krispies cereal until coated.
  6. Quickly fold in the chopped Oreos and the remaining 1/4 of the marshmallows.
  7. Transfer mixture to the prepared pan. Gently press into an even layer using slightly greased hands (do not pack tightly).
  8. Melt white chocolate chips with cream in the microwave in 30-second bursts. Drizzle over the treats.
  9. Finish with a drizzle of dark chocolate syrup. Let cool for 30 minutes before slicing.

Notes

Do not press the mixture too hard into the pan, or the treats will become hard. Using fresh marshmallows is key for the best texture.
