Gochujang Teriyaki Pineapple Chicken Bowls

Ingredients
  

Chicken & Marinade
  • 2 lbs boneless, skinless chicken thighs or breasts cut into 1-inch cubes
  • 1/4 cup soy sauce or tamari for GF
  • 1/4 cup brown sugar packed
  • 2 tbsp honey or maple syrup
  • 2 tbsp gochujang Korean chili paste
  • 1 tbsp fresh ginger finely grated
  • 3 cloves garlic minced
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
Glaze Thickener
  • 1 tbsp cornstarch dissolved in 2 tbsp cold water
Assembly & Garnish
  • 1 fresh pineapple cored and cubed
  • 4 cups cooked jasmine rice or other preferred grain
  • 2 green onions thinly sliced
  • 1 tbsp mixed sesame seeds toasted
  • 1-2 fresh red chilies thinly sliced, optional
  • 2 tbsp neutral cooking oil avocado or canola

Method
 

  1. Prepare and cook the rice to fluffy perfection. While cooking, prepare the fresh pineapple, garnishes, and toast the sesame seeds in a dry pan over low heat for maximum aroma.
  2. Whisk together the soy sauce, brown sugar, honey, gochujang, ginger, garlic, rice vinegar, and toasted sesame oil until the sauce is smooth and well-integrated.
  3. Reserve half of the sauce. Toss the cubed chicken in the remaining half and marinate for 15 minutes at room temperature (or up to 2 hours in the fridge).
  4. Heat 2 tablespoons of oil in a large pan over medium-high heat. Sear the chicken in batches for 8–10 minutes, tossing until cooked through and deeply caramelized.
  5. Wipe the pan. Add the cubed pineapple and cook for 3–5 minutes until the edges are golden, then remove from the pan.
  6. Simmer the reserved sauce. Whisk in the cornstarch slurry and cook for 1–2 minutes until a rich, glossy glaze forms. Return the chicken and pineapple, tossing to coat.
  7. Assemble the bowls with hot rice, the glossy teriyaki chicken and pineapple mixture, and garnish generously with sliced green onions, mixed toasted sesame seeds, and extra red chilies if desired.
  8. Serve immediately, perhaps with an extra side of the thick sauce from the pan.

Notes

Chicken thighs provide a more succulent result. Pat the chicken dry before marinating and searing for the best caramelized edges. Great for meal prep.
