Fudgy Chocolate Cherry Brownies

Ingredients
  

Wet Ingredients
  • 1 cup unsalted butter melted
  • 8 oz semi-sweet chocolate chopped bar, not chips
  • 3 large eggs plus 1 extra yolk
  • 1 tsp vanilla extract
Dry Ingredients & Sugar
  • 1.25 cups granulated sugar
  • 0.5 cup brown sugar packed
  • 0.75 cup all-purpose flour
  • 0.5 cup Dutch-processed cocoa powder sifted
  • 0.5 tsp salt
Mix-ins
  • 1.5 cups cherries fresh or frozen, pitted and halved
  • 0.5 cup chocolate chips

Equipment

  • 9x9 Baking Pan
  • Double boiler or microwave-safe bowl
  • Electric Mixer
  • Parchment paper

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x9 inch pan with parchment paper, leaving overhang.
  2. Melt butter and chopped chocolate together until smooth. Let cool slightly.
  3. In a large bowl, beat eggs, yolk, granulated sugar, brown sugar, and vanilla for 5-7 minutes until pale and thick.
  4. Fold the melted chocolate mixture into the egg mixture.
  5. Sift flour, cocoa powder, and salt into the bowl. Fold gently until just combined.
  6. Fold in the cherries and chocolate chips.
  7. Pour batter into pan. Bake for 35-40 minutes until a toothpick comes out with moist crumbs (not wet batter).
  8. Cool completely in the pan before lifting out and slicing.

Notes

If using frozen cherries, do not thaw completely to prevent bleeding color.
