Fresh Fruit Waffle Cones

Ingredients
  

Fruit Filling
  • 1 cup fresh strawberries hulled and quartered
  • 1 cup fresh blueberries washed and dried
  • 1 cup fresh raspberries washed and dried
  • 1 cup fresh blackberries washed and dried
  • 1 cup cantaloupe or mango cut into bite-sized cubes
Base
  • 12 mini waffle cones
  • 0.5 cup chocolate chips optional, for coating inside
  • 12 sprigs fresh mint optional garnish

Equipment

  • Large mixing bowl
  • Cutting board
  • Knife
  • Cone stand (optional)

Method
 

  1. Wash all berries and fruit thoroughly. Pat completely dry with paper towels to prevent soggy cones.
  2. Hull and quarter the strawberries. Dice the cantaloupe or mango into small, bite-sized cubes.
  3. Optional: Melt chocolate chips in the microwave. Brush a thin layer inside each cone to prevent sogginess. Let cool and set.
  4. In a large bowl, gently toss all the prepared fruit together until evenly mixed.
  5. Carefully scoop the fruit salad mixture into the waffle cones, piling it slightly high at the top.
  6. Garnish each cone with a small sprig of fresh mint if desired. Serve immediately or store upright in the fridge.

Notes

If not serving immediately, coating the inside of the cone with melted chocolate is highly recommended to act as a barrier against fruit juices.
