Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat salmon fillets dry with paper towels. Place on baking sheet and season generously with salt and pepper.
- In a small bowl, combine Panko, Parmesan, melted butter, parsley, garlic powder, and onion powder. Mix well.
- Brush a thin layer of Dijon mustard (or mayonnaise) over the top of each salmon fillet.
- Spoon the breadcrumb mixture evenly over the fillets, pressing gently so it adheres to the binder.
- Bake for 12-15 minutes, or until the fish flakes easily and the crust is golden brown.
- Let rest for 5 minutes before serving with lemon wedges.
Notes
For an extra golden crust, broil for the last 1-2 minutes, watching closely to prevent burning. Do not overcook the salmon.
