Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream softened butter and sugar until fluffy. Beat in eggs one at a time, then add vanilla and orange zest.
- Whisk together flour, baking powder, and salt. Gradually add to wet ingredients until combined. Fold in dried cranberries.
- Divide dough in half. Shape into two 10x3 inch logs on the baking sheet. Bake for 25-30 minutes until firm and golden.
- Remove from oven and cool on the pan for 20-25 minutes. Reduce oven temp to 300°F (150°C).
- Transfer logs to a cutting board. Using a serrated knife, slice diagonally into 3/4-inch thick slices.
- Place slices cut-side down back on baking sheet. Bake 10-12 minutes, flip, and bake another 10-12 minutes until dry.
- Cool completely on a wire rack. Drizzle with melted white chocolate and garnish with extra zest.
Notes
Must use a serrated knife and cool logs for 20 minutes before slicing to prevent crumbling. Store in an airtight container for up to 2 weeks.
