Ingredients
  

Whipped Feta Base
  • 8 oz feta cheese block in brine, drained
  • 4 oz cream cheese softened
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 clove garlic minced (optional)
Cranberry Topping
  • 12 oz fresh cranberries
  • 1 cup sugar
  • 0.25 cup water
  • 0.25 cup orange juice
  • 1 tbsp orange zest
Garnish
  • 0.5 cup pecans toasted and chopped
  • 0.25 cup green onions sliced
  • 1 tbsp honey for drizzling

Method
 

  1. In a saucepan, combine cranberries, sugar, water, and orange juice. Bring to a boil over medium heat.
  2. Reduce heat and simmer for 10-15 minutes until cranberries burst and sauce thickens. Remove from heat and stir in orange zest.
  3. Transfer cranberry mixture to a bowl and refrigerate until completely cool. (Do not skip this step).
  4. In a food processor, combine crumbled feta, softened cream cheese, olive oil, and honey. Process on high for 3-4 minutes until light and creamy.
  5. Spread whipped feta onto a serving platter or shallow bowl, creating a well in the center.
  6. Top with the cooled cranberry mixture.
  7. Garnish with toasted pecans, green onions, and an extra drizzle of honey. Serve with crackers or baguette.

Notes

Ensure the cranberry topping is completely cold before adding it to the cheese, otherwise, the cheese will melt. Toasting the pecans in a dry skillet for 3 minutes enhances their flavor significantly.
