Method
- Lightly grease lollipop molds with cooking spray and insert the sticks. Set up your workspace with flavors and colors ready.
- In a heavy saucepan, combine sugar, corn syrup, and water. Stir gently over medium-high heat until sugar dissolves and mixture boils. Stop stirring.
- Clip on the candy thermometer. Boil undisturbed until the temperature reaches exactly 300°F (149°C) - the hard crack stage.
- Immediately remove from heat. Let bubbles subside for 10 seconds, then quickly and carefully stir in your extract and gel food coloring.
- Carefully pour the hot syrup into the prepared molds, covering the top of the sticks. Pour slightly higher to trap air bubbles if desired.
- Let cool completely undisturbed at room temperature for 30-45 minutes until rock hard. Pop out of molds and wrap individually.
Notes
Safety First: Boiling sugar is extremely hot. Do not touch the syrup or the pan with bare hands. Humid weather will ruin hard candy; make these on a dry day for best results.
