Ingredients
  

Crust
  • 16.5 oz refrigerated sugar cookie dough 1 roll
Frosting
  • 8 oz cream cheese softened
  • 0.25 cup unsalted butter softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
Toppings
  • 2 cups fresh strawberries sliced
  • 3 kiwis peeled and sliced
  • 1 cup fresh blueberries
  • 1.5 cups gummy sea creatures turtles, crabs, etc.
  • 1 packet edible candy googly eyes

Equipment

  • 15x10-inch jelly roll pan
  • Electric Mixer
  • Mixing bowls
  • Parchment paper

Method
 

  1. Preheat oven to 350°F (175°C). Line a 15x10-inch baking sheet with parchment paper.
  2. Press the sugar cookie dough evenly into the bottom of the prepared pan.
  3. Bake for 12-15 minutes until edges are golden brown. Let cool completely on a wire rack.
  4. Beat softened cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until light and fluffy.
  5. Spread the frosting evenly over the completely cooled cookie crust.
  6. Attach candy eyes to the gummy sea creatures using a tiny dab of frosting.
  7. Decorate the frosted crust with sliced strawberries, kiwis, blueberries, and the prepared gummy sea creatures.
  8. Refrigerate for at least 1 hour before slicing and serving.

Notes

Ensure your cookie base is 100% cooled before frosting, otherwise the cream cheese mixture will melt. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
