Ingredients
  

Ganache Base
  • 8 oz dark chocolate (60-70% cocoa) finely chopped bar chocolate, do not use chips
  • 0.5 cup heavy whipping cream
  • 1 tbsp unsalted butter room temperature
  • 1.5 tsp instant espresso powder adjust to taste
  • 1 pinch fine sea salt
Coating
  • 0.5 cup Dutch-process cocoa powder for rolling and dusting

Equipment

  • Heat-proof mixing bowl
  • Small saucepan
  • Whisk or rubber spatula
  • Small cookie scoop or melon baller
  • Baking sheet and parchment paper

Method
 

  1. Place finely chopped dark chocolate and salt in a heat-proof bowl.
  2. In a small saucepan, whisk together heavy cream and instant espresso powder. Bring to a gentle simmer over medium heat.
  3. Pour hot cream mixture immediately over the chocolate. Do not stir. Let sit for 5 minutes.
  4. Gently stir the mixture with a whisk or spatula, starting from the center, until smooth and glossy. Avoid incorporating air.
  5. Stir in the room temperature butter until completely melted and combined.
  6. Cover with plastic wrap pressed directly onto the surface and refrigerate for 2-3 hours until firm enough to scoop.
  7. Scoop tablespoon-sized portions of ganache onto a parchment-lined baking sheet.
  8. Working quickly with cocoa-dusted hands, roll portions into balls and immediately coat in cocoa powder.
  9. Chill finished truffles for 15 minutes to set. Store in an airtight container in the refrigerator.

Notes

For the best texture, serve at room temperature. Ensure you use high-quality bar chocolate, not chocolate chips, as chips contain stabilizers that prevent a smooth melt.
