Ultimate Roasted Garlic Bacon Burger

A decadent double-patty burger featuring sweet roasted garlic aioli, thick crispy bacon, and melted cheddar on a toasted brioche bun.

Ingredients
  

Roasted Garlic Aioli
  • 1 head garlic top trimmed
  • 0.5 cup mayonnaise
  • 1 tsp lemon juice fresh
  • 1 tbsp parmesan cheese grated
Burger Assembly
  • 1.5 lbs ground beef chuck 80/20 fat ratio
  • 8 slices bacon thick-cut, cooked crispy
  • 4 slices cheddar cheese sharp
  • 4 brioche buns
  • 2 tbsp butter for toasting buns
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper

Equipment

  • Cast iron skillet or griddle
  • Small baking dish (for garlic)
  • Spatula
  • Mixing Bowl

Method
 

  1. Preheat oven to 400°F (200°C). Cut top off garlic head, drizzle with oil, wrap in foil, and roast for 40 mins until soft.
  2. Squeeze roasted garlic cloves into a bowl, mash into a paste, and whisk in mayonnaise, lemon juice, and parmesan. Set aioli aside.
  3. Cook bacon in a large skillet until crispy. Remove bacon, drain fat (keep a little for flavor if desired), and wipe skillet.
  4. Form ground beef into 4 large or 8 thin patties. Do not overwork the meat.
  5. Butter cut sides of buns and toast in the skillet until golden. Set aside.
  6. Season patties with salt, pepper, and garlic powder. Sear in the hot skillet over medium-high heat for 3-4 mins per side.
  7. Add cheese slices in the last minute of cooking. Cover pan briefly to melt cheese.
  8. Assemble: Bun bottom, aioli, cheesy patties, bacon, more aioli, bun top. Serve immediately.

Notes

For extra garlic flavor, rub the toasted buns with a raw clove of garlic before adding the sauce. The aioli can be made up to 3 days in advance.
