- Preheat oven to 400°F (200°C). Cut top off garlic head, drizzle with oil, wrap in foil, and roast for 40 mins until soft.
- Squeeze roasted garlic cloves into a bowl, mash into a paste, and whisk in mayonnaise, lemon juice, and parmesan. Set aioli aside.
- Cook bacon in a large skillet until crispy. Remove bacon, drain fat (keep a little for flavor if desired), and wipe skillet.
- Form ground beef into 4 large or 8 thin patties. Do not overwork the meat.
- Butter cut sides of buns and toast in the skillet until golden. Set aside.
- Season patties with salt, pepper, and garlic powder. Sear in the hot skillet over medium-high heat for 3-4 mins per side.
- Add cheese slices in the last minute of cooking. Cover pan briefly to melt cheese.
- Assemble: Bun bottom, aioli, cheesy patties, bacon, more aioli, bun top. Serve immediately.
Notes
For extra garlic flavor, rub the toasted buns with a raw clove of garlic before adding the sauce. The aioli can be made up to 3 days in advance.
