Method
- Preheat a cast-iron skillet or grill to medium-high heat.
- In a bowl, gently mix ground beef, garlic powder, salt, pepper, and half the Italian seasoning. Form into 4 patties.
- Brush the cut sides of the brioche buns with melted butter. Toast on the skillet until golden, about 1-2 minutes. Remove.
- Place patties on the skillet. Cook for 4-5 minutes until a crust forms, then flip.
- Immediately spoon marinara sauce onto each patty, followed by a slice of mozzarella and 3-4 pepperoni slices.
- Cover the pan (add a splash of water if using a skillet to create steam) and cook for 3-4 minutes until cheese is melted.
- Spread a little extra marinara on the bottom bun. Place the patty on top. Garnish with remaining Italian herbs and Parmesan.
- Top with the bun lid and serve immediately.
Notes
Use 'cup and char' pepperoni for crispy edges. If you prefer extra heat, add crushed red pepper flakes to the meat mixture.
