Method
- Whisk flour, baking soda, baking powder, and fine sea salt together in a medium bowl.
- Cream softened butter, peanut butter, brown sugar, and granulated sugar until fluffy (about 3-4 minutes).
- Beat in eggs one at a time, then stir in vanilla extract.
- Gradually mix in dry ingredients until just combined, then fold in chopped PB cups and PB chips by hand.
- Cover and chill dough for at least 2 hours.
- Preheat oven to 350°F (175°C). Scoop large balls of dough onto parchment-lined baking sheets.
- Bake for 12-15 minutes until edges are golden but centers look soft. Cool on pan for 10 minutes, then transfer to wire rack.
- Melt chocolate chips with coconut oil in the microwave. Drizzle over cooled cookies and immediately sprinkle with flaky sea salt.
Notes
Do not skip the chilling step, otherwise the cookies will spread too much. Use commercial peanut butter like Jif or Skippy for best results, not natural types that separate.
