Ingredients
  

Sandwich Assembly
  • 4 slices sourdough bread thick cut
  • 8 slices Black Forest ham
  • 6 oz Gruyère cheese grated
  • 4 oz white cheddar cheese grated
  • 3 tbsp salted butter softened
  • 1 tbsp Dijon mustard optional
  • 2 tbsp cream cheese optional for extra creaminess

Equipment

  • Cast-iron skillet or non-stick pan
  • Spatula
  • Cheese grater

Method
 

  1. Grate the Gruyère and cheddar cheeses and mix them together in a bowl.
  2. Butter one side of each slice of sourdough bread generously.
  3. Flip the bread and spread a thin layer of Dijon mustard or cream cheese on the un-buttered side of two slices.
  4. Add a layer of the cheese blend to the un-buttered side.
  5. Fold the ham slices loosely and place them on top of the cheese.
  6. Top the ham with the remaining cheese blend.
  7. Place the top slice of bread on the sandwich, buttered side facing out.
  8. Heat a skillet over medium-low heat. Cook the sandwiches for 3-4 minutes per side, covering the pan initially to help the cheese melt.
  9. Once both sides are golden brown and cheese is oozing, remove from heat.
  10. Slice in half and serve hot.

Notes

Using a lid during the first few minutes of cooking is the secret to melting the cheese without burning the bread.
