Method
- Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
- Whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, mix eggs, buttermilk, oil, and vanilla. Add to dry ingredients and mix well.
- Carefully stir in hot coffee until batter is smooth (batter will be thin).
- Pour evenly into pans and bake 30-35 minutes. Cool completely on wire racks.
- Bloom gelatin in cold water for 5 minutes. Warm strawberry puree, stir in gelatin until dissolved, and let cool.
- Whip heavy cream and powdered sugar to stiff peaks. Gently fold in cooled strawberry puree.
- Place one cake layer in a springform pan. Top with strawberry mousse, then second cake layer. Chill 4+ hours.
- Remove from pan, decorate with whipped cream, fresh strawberries, and strawberry syrup.
Notes
Ensure cake layers are completely cool before adding the mousse to prevent melting. Total time includes 4 hours of chilling.
