Ingredients
  

Chocolate Cake
  • 2 cups all-purpose flour
  • 1.75 cups granulated sugar
  • 0.75 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 eggs room temperature
  • 1 cup buttermilk room temperature
  • 1 cup strong brewed coffee hot
  • 0.5 cup vegetable oil
  • 2 tsp vanilla extract
Strawberry Mousse & Topping
  • 2 cups fresh strawberries pureed
  • 1 tbsp unflavored gelatin powder
  • 0.25 cup cold water
  • 2 cups heavy whipping cream cold
  • 0.5 cup powdered sugar
  • 1 cup fresh strawberries whole or halved, for topping
  • 0.5 cup strawberry syrup for drizzling

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
  2. Whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix eggs, buttermilk, oil, and vanilla. Add to dry ingredients and mix well.
  4. Carefully stir in hot coffee until batter is smooth (batter will be thin).
  5. Pour evenly into pans and bake 30-35 minutes. Cool completely on wire racks.
  6. Bloom gelatin in cold water for 5 minutes. Warm strawberry puree, stir in gelatin until dissolved, and let cool.
  7. Whip heavy cream and powdered sugar to stiff peaks. Gently fold in cooled strawberry puree.
  8. Place one cake layer in a springform pan. Top with strawberry mousse, then second cake layer. Chill 4+ hours.
  9. Remove from pan, decorate with whipped cream, fresh strawberries, and strawberry syrup.

Notes

Ensure cake layers are completely cool before adding the mousse to prevent melting. Total time includes 4 hours of chilling.
