- Bake or fry the french fries according to package instructions or your recipe until they are highly crispy and golden brown.
- Transfer the hot fries to serving bowls or a heat-proof platter. Immediately sprinkle the grated cheddar and mozzarella evenly over the top so it begins to melt. (Optional: pop under the broiler for 1-2 minutes until bubbly).
- While the cheese is melting, heat butter or oil in a non-stick skillet over medium-low heat. Crack the eggs into the pan and cook gently until the whites are set but yolks are still runny (3-4 minutes). Season with a pinch of salt.
- Carefully slide the fried eggs on top of the cheesy fries.
- Garnish generously with fresh chopped parsley, paprika, and a crack of black pepper. Serve immediately and break the yolks over the fries.
Notes
For best results, grate your own cheese from a block rather than using pre-shredded cheese, as it melts much smoother. Add hot sauce or crispy bacon bits for extra flavor.
