Ingredients
  

Crust
  • 2 cups vanilla wafer crumbs finely crushed
  • 0.5 cup unsalted butter melted
  • 2 tbsp granulated sugar
Filling
  • 24 oz cream cheese 3 packages, softened
  • 1 cup granulated sugar
  • 1 cup sour cream room temperature
  • 1 cup mashed banana very ripe
  • 3 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 tbsp flour or cornstarch
Topping
  • 1.5 cups heavy whipping cream cold
  • 0.25 cup powdered sugar
  • 2 fresh bananas sliced for garnish
  • 10 vanilla wafers crushed or whole for garnish

Equipment

  • 9-inch springform pan
  • Stand Mixer or Hand Mixer
  • Roasting pan for water bath

Method
 

  1. Preheat oven to 350°F (175°C). Combine wafer crumbs, melted butter, and sugar.
  2. Press mixture firmly into the bottom and up the sides of a 9-inch springform pan. Bake for 10 minutes. Cool.
  3. Reduce oven to 325°F (160°C). Beat cream cheese and sugar until smooth. Mix in sour cream, mashed banana, vanilla, and flour.
  4. Add eggs one at a time, mixing on low speed until just combined.
  5. Pour batter into crust. Place pan in a water bath.
  6. Bake for 60-70 minutes until center is almost set. Turn off oven and let cool inside for 1 hour.
  7. Chill in refrigerator for at least 4 hours.
  8. Whip heavy cream with powdered sugar. Top cheesecake with whipped cream, banana slices, and cookies before serving.

Notes

Dip banana slices in lemon juice to prevent browning if you aren't serving immediately.
