Ingredients
  

The Base
  • 2 large bakery croissants sliced in half horizontally
The Filling
  • 4 large eggs pasture-raised preferred
  • 1 tbsp unsalted butter
  • 4 slices thick-cut bacon cooked crispy
  • 1 large avocado sliced
  • 1 tsp fresh lemon juice for avocado
  • 1 pinch salt and pepper to taste
Garnish
  • 2 tbsp savory sauce Hollandaise or maple-mustard
  • 1 tbsp fresh parsley finely chopped

Method
 

  1. Cook the bacon in a skillet over medium heat until crispy (8-10 minutes). Drain on paper towels.
  2. Slice the avocado, drizzle with lemon juice, and lightly salt.
  3. Slice croissants in half and lightly toast the cut sides in a warm skillet for 1-2 minutes.
  4. Whisk eggs until frothy. Melt butter in a non-stick skillet over medium-low heat. Add eggs and gently fold with a spatula until soft curds form. Remove from heat just before fully set.
  5. Place the bottom half of the croissant on a plate. Layer with scrambled eggs, crispy bacon, and avocado slices.
  6. Drizzle with savory sauce and garnish with chopped fresh parsley. Top with the other half of the croissant and serve immediately.

Notes

To save time, bacon can be baked in the oven at 400°F (200°C) for 15-20 minutes. Serve immediately for the best flaky texture.
