- In a large bowl, combine stuffing, turkey, mashed potatoes, 1 beaten egg, and gravy. Mix until sticky.
- Roll mixture into golf-ball sized spheres. If dry, add more gravy.
- Set up a dredging station: flour with spices in one bowl, beaten eggs in a second, breadcrumbs in a third.
- Roll each ball in flour, then dip in egg, then coat thoroughly in breadcrumbs.
- Refrigerate the coated balls for 20 minutes to help them set.
- Heat oil in a deep pan to 350°F (175°C).
- Fry balls in batches for 3-4 minutes until golden brown. Drain on a wire rack.
- Serve hot with leftover gravy or cranberry sauce.
Notes
Ensure your stuffing mixture is cold before frying, otherwise the balls may fall apart in the hot oil.
