- Preheat your waffle iron according to manufacturer's instructions. Lightly grease with cooking spray or brush with melted butter.
- In a large mixing bowl, whisk together flour, sugar, baking powder, salt, garlic powder, dried thyme, black pepper, and cornstarch until well combined.
- In a separate bowl, beat the eggs and then add milk and melted butter. Whisk until smooth and well incorporated.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter should be slightly lumpy.
- Pour recommended amount of batter onto preheated waffle iron (about 1/2 to 3/4 cup). Close lid and cook for 4-5 minutes until golden brown and crispy.
- Remove waffle carefully and place on wire rack. Repeat with remaining batter to make 8 waffle rounds.
- While waffles cool slightly, prepare filling ingredients. Slice avocados, separate turkey slices, and have cheese ready.
- To assemble, spread herb cream cheese or mayo on one waffle. Layer 3-4 slices of turkey, then add cheese slices.
- Optional: Place assembled bottom half under broiler for 30-60 seconds to melt cheese, watching carefully.
- Add sliced avocado on top of cheese, season with salt and pepper, and add any optional vegetables.
- Top with second waffle, press down gently, and cut in half diagonally.
- Garnish with fresh herbs and serve immediately while waffles are still crispy.
Notes
For best results, assemble sandwiches just before serving to maintain waffle crispiness. Waffles can be made ahead and frozen, then toasted before assembly. Add optional toppings like lettuce, tomato, or bacon for extra flavor.
