Tropical Pineapple Coconut Smoothie

Ingredients
  

Smoothie Base
  • 2 cups frozen pineapple chunks
  • 1 cup coconut milk unsweetened
  • 0.5 medium banana frozen and sliced
  • 1 tbsp honey or agave nectar optional
  • 0.5 tsp pure vanilla extract
Garnish
  • 1 tbsp toasted shredded coconut unsweetened
  • 2 wedges fresh pineapple

Equipment

  • High-Powered Blender
  • Small skillet (for toasting coconut)

Method
 

  1. Add the coconut milk, vanilla extract, and honey to the blender pitcher first.
  2. Add the frozen banana slices and frozen pineapple chunks on top of the liquid.
  3. Blend on low speed for a few seconds to break up the fruit, then increase to high speed. Blend for 45-60 seconds until completely smooth and creamy.
  4. If the smoothie is too thick, add a splash of extra coconut milk and blend again.
  5. Pour the smoothie into tall glasses.
  6. Garnish the rim of each glass with a fresh pineapple wedge and sprinkle the top with toasted shredded coconut. Serve immediately.

Notes

For the best texture, always use frozen fruit instead of fresh fruit with ice cubes. Ice dilutes the flavor and makes the drink watery.
