Tropical Mango Dragon Fruit Chia Parfait

Ingredients
  

Chia Pudding Layer
  • 1 can coconut milk full fat or lite
  • 0.33 cup chia seeds
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
Dragon Fruit Layer
  • 1 cup red dragon fruit fresh or frozen packs
  • 1 tbsp chia seeds to thicken
  • 1 tsp lime juice
Mango Topping
  • 2 cups fresh mango cubed
  • 1 tbsp agave syrup optional for glaze

Method
 

  1. In a bowl, whisk together coconut milk, vanilla, maple syrup, and 1/3 cup chia seeds. Let sit for 5 minutes, whisk again to remove clumps, then refrigerate for at least 4 hours.
  2. Blend the dragon fruit until smooth. Stir in 1 tablespoon of chia seeds to help it set. Let this mixture sit for 20 minutes.
  3. Dice the fresh mango into cubes. Mash a small portion of the mango to create a natural sauce and toss the cubes in it.
  4. To assemble, spoon the dragon fruit mixture into the bottom of 3 glasses.
  5. Layer the thickened white coconut chia pudding on top of the dragon fruit.
  6. Top generously with the cubed mango and drizzle with any remaining fruit juices.
  7. Garnish with edible flowers and serve chilled.

Notes

Total time includes 4 hours of chilling time for the chia seeds to set. For a protein boost, add a scoop of vanilla protein powder to the coconut milk mixture.
