Method
- In a bowl, whisk together coconut milk, vanilla, maple syrup, and 1/3 cup chia seeds. Let sit for 5 minutes, whisk again to remove clumps, then refrigerate for at least 4 hours.
- Blend the dragon fruit until smooth. Stir in 1 tablespoon of chia seeds to help it set. Let this mixture sit for 20 minutes.
- Dice the fresh mango into cubes. Mash a small portion of the mango to create a natural sauce and toss the cubes in it.
- To assemble, spoon the dragon fruit mixture into the bottom of 3 glasses.
- Layer the thickened white coconut chia pudding on top of the dragon fruit.
- Top generously with the cubed mango and drizzle with any remaining fruit juices.
- Garnish with edible flowers and serve chilled.
Notes
Total time includes 4 hours of chilling time for the chia seeds to set. For a protein boost, add a scoop of vanilla protein powder to the coconut milk mixture.
