Ingredients
  

Cupcake Batter
  • 1.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.25 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs large
  • 2 tsp vanilla extract
  • 0.75 cup whole milk
Frosting & Drip
  • 8 oz cream cheese softened
  • 0.5 cup unsalted butter softened
  • 1 tsp vanilla extract
  • 3 cups powdered sugar
  • 2 tbsp milk or cream optional
  • 1 cup powdered sugar (for drip)
  • 1-2 tbsp milk (for drip)
Garnish
  • 1 cup crushed graham crackers
  • 12 striped cookies
  • 12 fresh raspberries
  • 12 small brown candies
  • 12 miniature cocktail umbrellas
  • 12 gummy bears
  • 12 round life preserver candies

Method
 

  1. Preheat oven to 350°F (175°C). Line muffin tin with blue paper cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream softened butter and granulated sugar until light and fluffy. Add eggs and vanilla extract, mixing well.
  4. Gradually mix in dry ingredients, alternating with whole milk, until combined.
  5. Fill cupcake liners 2/3 full with batter.
  6. Bake 18-20 minutes until a toothpick comes out clean. Cool completely on wire rack.
  7. Beat softened cream cheese and butter until smooth. Add vanilla and powdered sugar, mixing until fluffy. Add milk/cream if needed for consistency.
  8. Frost cooled cupcakes to form detailed mounds. Apply the Sugary Drip: Mix 1 cup powdered sugar and 1-2 tbsp milk until thin enough to run but thick enough to drip. Carefully cascade around the base of the frosting.
  9. Apply crushed graham cracker 'sand' to the base of the drip and the cake, covering the bottom section entirely. Top each cupcake with a fanned striped cookie (beach chair), a raspberry, a brown candy, a miniature umbrella, a gummy bear, and a life preserver candy, arranging thoughtfully for unique little paradise scenes.

Notes

Store cupcakes in an airtight container in the refrigerator for up to 3 days. For best visual effect, assemble toppings just before serving. Use different candy items for endless creative variations.
