Ingredients

  • 6 large flour tortillas burrito size, 8-10 inch
  • 0.75 cup pizza or marinara sauce thick consistency is best
  • 1.5 cups shredded mozzarella cheese or a pizza blend
  • 1 cup pepperoni slices mini or regular, sliced thinly
  • 0.5 tsp Italian seasoning for sprinkling

Equipment

  • Baking sheet
  • Parchment paper
  • Sharp knife

Method

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Lay one tortilla flat on a clean surface. Spread about 2 tablespoons of the pizza sauce evenly over the entire surface, leaving a half-inch border.
  3. Sprinkle with a quarter cup of shredded mozzarella and a generous layer of pepperoni slices. Lightly sprinkle with Italian seasoning.
  4. Starting from one edge, tightly roll the tortilla into a log shape. Roll as snugly as possible to maintain the spiral shape.
  5. Using a sharp knife, slice the log into 6 pinwheels (about 1.5 inches thick each). Repeat with the remaining tortillas and filling.
  6. Place the pinwheels cut-side up on the prepared baking sheet, ensuring they are slightly spaced apart.
  7. Bake for 10-12 minutes, or until the cheese is completely melted and bubbly, and the tortilla edges are lightly golden and crisp.
  8. Carefully remove from the oven and serve immediately with extra pizza sauce for dipping.

Notes

For extra crispiness, you can cook these in an air fryer at 375°F (190°C) for 6-8 minutes. Customize the filling with cooked sausage, mushrooms, or diced peppers. Ensure your sauce is thick to prevent soggy rolls.
