Ingredients
  

Coffee Chia Base
  • 0.25 cup chia seeds
  • 0.5 cup strong brewed coffee cooled
  • 0.5 cup almond milk or milk of choice
  • 2 tbsp maple syrup or honey
  • 0.5 tsp vanilla extract
  • 1 tbsp cocoa powder optional
Cream Layer
  • 0.5 cup Greek yogurt thick
  • 1 tsp maple syrup
  • 0.5 tsp vanilla extract
Garnish
  • 1 tsp cocoa powder for dusting
  • 6 coffee beans whole

Method
 

  1. Brew coffee or espresso and allow it to cool completely to room temperature.
  2. In a bowl, whisk together the cooled coffee, almond milk, maple syrup, vanilla, and cocoa powder until smooth.
  3. Add chia seeds and whisk vigorously immediately to prevent clumping.
  4. Let stand for 5 minutes, whisk again, then cover and refrigerate for at least 2 hours (or overnight) until thickened.
  5. In a separate small bowl, mix the Greek yogurt with the sweetener and vanilla until creamy.
  6. Once the chia mixture is set, spoon it into serving glasses.
  7. Top gently with the yogurt mixture, creating a distinct white layer.
  8. Using a sieve, dust the tops generously with cocoa powder.
  9. Garnish with 3 coffee beans per cup and serve.

Notes

For a vegan version, use coconut yogurt. For extra protein, add a scoop of protein powder to the coffee base liquid before adding seeds.
