- Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
- In a large bowl or stand mixer, cream together softened butter, brown sugar, and granulated sugar on medium-high speed for 3-4 minutes until fluffy.
- Add eggs one at a time, beating well after each. Mix in the vanilla extract.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add the dry flour mixture to the wet ingredients, mixing on low speed just until combined.
- Using a spatula, manually fold in the oats, chocolate chunks, and walnuts until evenly distributed.
- Scoop dough into 3-tablespoon sized balls and place on baking sheets, 2 inches apart.
- Bake for 10-12 minutes until edges are golden brown but centers look slightly soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For perfectly round cookies, use a round cookie cutter to gently scoot the cookies into circles immediately after taking them out of the oven. Store in an airtight container for up to 4 days.
