- Sauté minced garlic, habanero peppers, and optional ginger in oil for 2-3 minutes until fragrant. Do not burn.
- Add mango, honey, vinegar, water, lime juice, salt, and red pepper flakes to the saucepan. Stir well.
- Bring to a low boil, then reduce heat to a low simmer. Simmer uncovered for 20-30 minutes, stirring occasionally, until the sauce reduces by one-third and achieves a thick, highly viscous, and heavy consistency.
- Remove from heat and allow to cool completely. The sauce will thicken further as it cools, forming a glossy, heavy glaze.
- Store in an airtight jar in the refrigerator for up to two weeks. Use as a glaze, dip, or marinade.
Notes
Simmering time is key for achieving the thick, highly viscous texture. For less heat, use fewer habanero peppers or substitute with a milder pepper like jalapeño. Always use caution when handling and cooking habaneros.
