Ingredients

Syrup & Tea Prep
  • 1 tbsp butterfly pea flowers dried
  • 0.5 cup water boiling, for tea
  • 0.5 cup sugar for syrup
  • 0.5 cup water for syrup
  • 2 tbsp lavender buds dried, culinary grade
Per Cocktail
  • 2 oz gin or vodka
  • 1 oz lemon juice freshly squeezed
  • 0.75 oz lavender simple syrup homemade
  • 1 oz butterfly pea tea cooled, divided
  • 1 oz sparkling water or club soda
  • 1 handful clear ice cubes for serving
  • 1 sprig dried lavender for garnish

Equipment

  • Ribbed Rocks Glass
  • Bar spoon
  • Fine-mesh sieve
  • Small saucepan

Method

  1. Steep butterfly pea flowers in boiling water for 10 minutes. Strain and chill.
  2. Make syrup: Dissolve sugar in water over medium heat. Remove from heat, add lavender buds, steep for 25 mins. Strain and chill.
  3. In a rocks glass, combine 3/4 oz lavender syrup and 1/2 oz butterfly pea tea. Stir to create the dense blue base.
  4. Fill the glass to the brim with clear ice cubes.
  5. In a separate shaker, swirl together gin, lemon juice, remaining 1/2 oz butterfly tea, and sparkling water.
  6. Slowly pour the gin mixture over the back of a bar spoon into the glass so it floats on top of the blue syrup base.
  7. Garnish with a sprig of dried lavender across the rim and an edible flower. Serve immediately.

Notes

To make a mocktail, simply replace the 2 oz of gin with additional sparkling water or a botanical non-alcoholic spirit. Advise guests to stir the drink before consuming.
