Ingredients
  

The Base
  • 1 cup quinoa rinsed
  • 2 cups water or vegetable broth
  • 2 cups red cabbage shredded
  • 1 large cucumber sliced into half-moons
  • 0.5 cup carrots shredded
  • 3 green onions sliced
  • 0.25 cup fresh cilantro chopped
Peanut Dressing
  • 0.33 cup creamy peanut butter
  • 2 tbsp soy sauce or tamari for GF
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp fresh ginger grated
  • 1-2 tbsp warm water to thin

Method
 

  1. In a medium saucepan, combine rinsed quinoa and water/broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  2. Remove quinoa from heat and let sit covered for 5 minutes, then fluff with a fork and let cool slightly.
  3. In a small bowl, whisk together peanut butter, soy sauce, sweetener, rice vinegar, and ginger. Add water until it reaches a drizzling consistency.
  4. In large serving bowls, portion out the quinoa and top with shredded cabbage, cucumbers, and carrots.
  5. Drizzle the creamy peanut sauce generously over the vegetables and quinoa.
  6. Garnish with sliced green onions, fresh cilantro, and sesame seeds before serving.

Notes

Add tofu or grilled chicken for extra protein. This dish stays fresh in the fridge for up to 4 days, making it perfect for meal prep.
