Sweet & Spicy Sticky Chicken Tacos with Mango Salsa

Ingredients
  

Mango Salsa
  • 2 ripe mangoes diced
  • 0.25 cup red onion finely diced
  • 0.5 cup cilantro chopped
  • 1 lime juiced
  • 1 pinch salt
Sticky Chicken
  • 1.5 lbs chicken thighs or breasts cut into 1-inch cubes
  • 2 tbsp cornstarch
  • 2 tbsp oil for frying
  • 3 cloves garlic minced
The Glaze
  • 0.33 cup honey
  • 3 tbsp soy sauce
  • 1 tbsp Sriracha or chili paste adjust to taste
  • 1 tbsp lime juice

Method
 

  1. Combine diced mango, red onion, cilantro, lime juice, and salt in a bowl. Toss and set aside to marinate.
  2. Whisk honey, soy sauce, Sriracha, and lime juice in a small jar.
  3. Toss chicken cubes with cornstarch, salt, and pepper.
  4. Sear chicken in oil over medium-high heat for 4-5 mins until golden and crispy.
  5. Add minced garlic to the pan, cook for 30 secs, then pour in the sauce mixture.
  6. Simmer for 1-2 mins until sauce reduces and coats chicken in a thick glaze.
  7. Char tortillas over an open flame or in a dry pan.
  8. Fill tortillas with sticky chicken and top generously with mango salsa. Serve with lime wedges.

Notes

For extra spice, add a diced jalapeno to the salsa. If the sauce becomes too thick too fast, add a splash of water.
