Ingredients
  

Sandwich Components
  • 2 large all-butter croissants from a bakery is best
  • 6 slices thick-cut bacon
  • 0.5 cup blue cheese crumbled (like Gorgonzola or Roquefort)
  • 2 cups baby arugula washed and dried
  • 2 tbsp honey plus more for drizzling, hot honey is also great

Equipment

  • Skillet or Baking Sheet
  • Serrated Bread Knife
  • Tongs

Method
 

  1. Cook the bacon in a large skillet over medium heat or bake in a 400°F (200°C) oven until crispy. Transfer to paper towels to drain.
  2. Slice the croissants in half horizontally using a serrated knife. Optionally, toast them lightly.
  3. Place the bottom halves of the croissants on plates. Layer with a generous handful of baby arugula.
  4. Top the arugula with crumbled blue cheese.
  5. Arrange 3 slices of crispy bacon on top of the cheese on each sandwich.
  6. Drizzle a tablespoon of honey generously over the bacon and cheese on each sandwich. You can also brush a little honey on the top crust.
  7. Place the top halves of the croissants on top and serve immediately.

Notes

For a twist, try adding thinly sliced pears or apples before the cheese layer. If you don't like blue cheese, goat cheese or feta are good substitutes.
