- Cook the bacon in a large skillet over medium heat or bake in a 400°F (200°C) oven until crispy. Transfer to paper towels to drain.
- Slice the croissants in half horizontally using a serrated knife. Optionally, toast them lightly.
- Place the bottom halves of the croissants on plates. Layer with a generous handful of baby arugula.
- Top the arugula with crumbled blue cheese.
- Arrange 3 slices of crispy bacon on top of the cheese on each sandwich.
- Drizzle a tablespoon of honey generously over the bacon and cheese on each sandwich. You can also brush a little honey on the top crust.
- Place the top halves of the croissants on top and serve immediately.
Notes
For a twist, try adding thinly sliced pears or apples before the cheese layer. If you don't like blue cheese, goat cheese or feta are good substitutes.
