Ingredients
  

Bowl Base
  • 2 large sweet potatoes peeled and cubed
  • 1 lb lean ground beef 90/10 or 93/7
  • 3 tbsp olive oil divided
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 1 tsp kosher salt plus more to taste
  • 0.5 tsp black pepper freshly ground
Toppings & Drizzle
  • 1 large avocado halved, pitted, and sliced
  • 0.5 cup feta or goat cheese crumbled
  • 2 tbsp hot honey or maple syrup with cayenne

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Toss sweet potato cubes with 2 tbsp olive oil, 1/2 tsp salt, 1/4 tsp pepper, and smoked paprika. Spread in an even layer on the baking sheet.
  3. Roast for 25-30 minutes, tossing halfway, until fork-tender and caramelized.
  4. Heat 1 tbsp olive oil in a skillet over medium-high heat. Add ground beef and break it up as it cooks.
  5. Season beef with garlic powder, onion powder, remaining salt, and pepper. Cook until browned and slightly crispy (8-10 minutes).
  6. Slice the avocado and fan out the pieces.
  7. Assemble bowls by dividing the roasted sweet potatoes and ground beef evenly.
  8. Top each bowl with sliced avocado and crumbled feta cheese.
  9. Drizzle generously with hot honey right before serving. Enjoy!

Notes

Excellent for meal prep! Store the meat and potatoes together in the fridge for up to 4 days. Add the fresh avocado, cheese, and honey drizzle only after reheating.
