Method
- In a large bowl, whisk ricotta, eggs, sugar, and vanilla until smooth.
- Whisk flour and baking powder in a separate bowl, then gently stir into the wet ingredients to form a soft dough.
- On a floured surface, divide dough into 4 parts, roll into ropes, and cut into 1-inch pieces.
- Heat oil in a deep pan to 350°F (175°C).
- Fry dough pieces in batches for 3-4 minutes until deep golden brown and puffed.
- Drain fried gnocchi on paper towels.
- Warm honey and lemon juice in a small pan until runny.
- Toss fried gnocchi in the warm honey glaze to coat thoroughly.
- Transfer to a plate and sprinkle with sesame seeds, pomegranate seeds, and fresh mint. Serve warm.
Notes
Strain the ricotta cheese well before using; if the dough is too sticky, add a little more flour, but keep it as soft as possible for a fluffy texture.
