Ingredients
  

Dough
  • 1 cup whole milk ricotta cheese strained
  • 2 large eggs
  • 1.5 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tsp baking powder
Frying & Glaze
  • 2 cups vegetable oil for frying
  • 0.5 cup honey
  • 1 tbsp lemon juice
Garnish
  • 2 tbsp sesame seeds toasted
  • 0.5 cup pomegranate seeds
  • fresh mint leaves

Equipment

  • Large mixing bowl
  • Deep skillet or Dutch oven for frying
  • Slotted spoon
  • Wire rack or paper towels

Method
 

  1. In a large bowl, whisk ricotta, eggs, sugar, and vanilla until smooth.
  2. Whisk flour and baking powder in a separate bowl, then gently stir into the wet ingredients to form a soft dough.
  3. On a floured surface, divide dough into 4 parts, roll into ropes, and cut into 1-inch pieces.
  4. Heat oil in a deep pan to 350°F (175°C).
  5. Fry dough pieces in batches for 3-4 minutes until deep golden brown and puffed.
  6. Drain fried gnocchi on paper towels.
  7. Warm honey and lemon juice in a small pan until runny.
  8. Toss fried gnocchi in the warm honey glaze to coat thoroughly.
  9. Transfer to a plate and sprinkle with sesame seeds, pomegranate seeds, and fresh mint. Serve warm.

Notes

Strain the ricotta cheese well before using; if the dough is too sticky, add a little more flour, but keep it as soft as possible for a fluffy texture.
