Ingredients
  

Pastry Base
  • 2 sheets puff pastry thawed
  • 1 tbsp unsalted butter melted (optional for pan)
Filling
  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
Topping
  • 1 large egg white beaten with 1 tsp water
  • 0.25 cup powdered sugar for dusting

Method
 

  1. Preheat oven to 400°F (200°C). Line a 9x13 inch baking pan with parchment paper.
  2. Unroll one sheet of puff pastry and press it into the bottom of the prepared pan.
  3. In a mixing bowl, beat softened cream cheese and sugar until smooth. Add egg yolk, vanilla, and lemon juice; mix well.
  4. Spread the cream cheese filling evenly over the bottom pastry sheet, leaving a small border.
  5. Place the second sheet of puff pastry over the filling. Pinch edges to seal.
  6. Brush the top with the egg white wash. Lightly score the dough into 12 squares with a knife.
  7. Bake for 20-25 minutes until puffed and deep golden brown.
  8. Cool in the pan for 20 minutes to let filling set. Dust with powdered sugar before serving.

Notes

Ensure cream cheese is at room temperature to avoid lumps. Do not open the oven door during the first 15 minutes of baking or the pastry may collapse.
