Method
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, cornstarch, and salt.
- In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Add the blue gel food coloring and mix until the color is evenly distributed and vibrant.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
- Fold in the white chocolate chips by hand.
- Scoop dough into balls (about 2 tablespoons each) and place 2 inches apart on baking sheets.
- Bake for 9-11 minutes, until edges are set but centers are still soft. Do not overbake.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For thicker cookies, chill the dough balls in the refrigerator for 30 minutes before baking.
