Ingredients
  

Dry Ingredients
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • 0.5 tsp salt
Wet Ingredients
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 2 eggs large
  • 2 tsp vanilla extract
Mix-ins
  • 1 tsp blue gel food coloring adjust for desired shade
  • 1.5 cups white chocolate chips

Equipment

  • Stand Mixer or Hand Mixer
  • Parchment paper
  • Wire cooling rack

Method
 

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cornstarch, and salt.
  3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Add the blue gel food coloring and mix until the color is evenly distributed and vibrant.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  7. Fold in the white chocolate chips by hand.
  8. Scoop dough into balls (about 2 tablespoons each) and place 2 inches apart on baking sheets.
  9. Bake for 9-11 minutes, until edges are set but centers are still soft. Do not overbake.
  10. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For thicker cookies, chill the dough balls in the refrigerator for 30 minutes before baking.
