- Choose and Prepare Your Fruit: Wash and dry plums completely with paper towels. They must be completely dry.
- Create Egg White Glue: Lightly whisk the egg white with 1 tablespoon of water (or vodka) in a small bowl until just frothy and uniform. Do not whisk to peaks.
- Prepare Sugar Mix: In a shallow, wide bowl or pie dish, combine the coarse granulated sugar, ground cinnamon, and salt.
- Glue and Coat: Working with one plum at a time, paint a thin, even coat of the egg white glue over the entire surface with a pastry brush.
- Roll in Sugar: Immediately place the glued plum into the sugar mixture. Gently roll the plum to coat thoroughly, ensuring a complete, crusted sparkling layer.
- Let Dry and Set: Place the coated plums on a wire rack and let dry undisturbed for at least 1 hour, or until the surface is completely hard and no longer sticky.
Notes
Ensure fruit is fully dry. Use coarse sugar for maximum sparkle. Work quickly. Do not apply a thick coat of glue. Use pasteurized egg whites if to be eaten.
