Method
- Cook rice according to package directions and keep warm.
- Cut chicken into uniform 1-inch cubes for even cooking.
- Mix chili powder, paprika, cumin, garlic powder, salt, and pepper in a small bowl.
- Toss chicken cubes with olive oil, then coat evenly with spice mixture.
- Heat large skillet over medium-high heat. Add chicken in single layer and cook 3-4 minutes per side until charred and cooked through to 165°F.
- If using fresh or frozen corn, char in the same pan after removing chicken. For canned corn, drain and heat through.
- Make sauce by whisking together Greek yogurt, mayonnaise, lime juice, cilantro, garlic, salt, and cayenne if using.
- Assemble bowls with rice base, top with chicken and corn, drizzle generously with sauce, and garnish with fresh cilantro and lime wedges.
Notes
For meal prep, store components separately in airtight containers for up to 4 days. Add extra toppings like black beans, avocado, shredded cheese, or pickled onions. Adjust spice level to preference by adding more or less chili powder and cayenne.
