- In a medium mixing bowl, whisk together flour, baking powder, baking soda, salt, and freeze-dried strawberry powder. Set aside.
- In a large bowl, cream softened butter and granulated sugar with electric mixer for 3-4 minutes until light and fluffy.
- Add egg and strawberry extract, beating until fully incorporated. Mix in sour cream and pink food coloring.
- Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
- Cover bowl with plastic wrap and refrigerate dough for at least 2 hours or overnight.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Place granulated sugar in one bowl and powdered sugar in another. Roll dough into balls, coat in granulated sugar first, then generously in powdered sugar.
- Place coated balls on prepared baking sheets, spacing 2 inches apart. Bake 10-12 minutes until cracked and edges are set.
- Cool cookies on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
- Prepare glaze by whisking powdered sugar, milk, strawberry extract, and pink food coloring until smooth and pourable.
- Drizzle glaze over cooled cookies and immediately top with pink sprinkles. Let set for 30 minutes before serving.
Notes
