Ingredients
  

French Toast
  • 8 slices Brioche or Challah bread thick-cut
  • 4 eggs large
  • 1 cup whole milk
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
Filling
  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 cup strawberries sliced
Topping
  • 2 cups strawberries for sauce
  • 1/4 cup sugar

Method
 

  1. Make the compote: Simmer 2 cups strawberries with sugar and a splash of lemon juice in a saucepan until syrupy (8-10 mins). Set aside.
  2. Mix filling: Beat softened cream cheese, powdered sugar, and vanilla until smooth.
  3. Assemble: Spread filling on bread slices. Top with fresh sliced strawberries and sandwich with another slice of bread.
  4. Make custard: Whisk eggs, milk, cinnamon, and vanilla in a shallow bowl.
  5. Dip sandwiches into the custard for 5-10 seconds per side.
  6. Cook in a buttered skillet over medium heat for 3-4 minutes per side until golden brown.
  7. Serve warm topped with the strawberry compote and powdered sugar.

Notes

Use day-old bread for better absorption without sogginess. Ensure cream cheese is at room temperature for easy spreading.
