Ingredients
  

Filling & Rolls
  • 8-10 slices soft white bread crusts removed
  • 8 oz cream cheese softened
  • 0.25 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries finely diced
Coating & Frying
  • 2 large eggs
  • 0.25 cup milk
  • 0.5 tsp cinnamon
  • 1 cup graham cracker crumbs or cornflake crumbs
  • 3 tbsp butter for frying, divided

Method
 

  1. Flatten bread slices with a rolling pin.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in diced strawberries.
  3. Spread a tablespoon of filling on one edge of each bread slice and roll up tightly.
  4. Whisk eggs, milk, and cinnamon in a shallow dish. Place crumbs in another dish.
  5. Dip each roll quickly in the egg mixture, then coat completely in crumbs.
  6. Melt butter in a skillet over medium heat. Fry rolls in batches until golden brown on all sides.
  7. Serve warm with maple syrup or powdered sugar.

Notes

Use soft sandwich bread for the best results; it rolls easier without breaking. Don't overfill the rolls.
