Ingredients
  

Strawberry Chia Pudding
  • 1 cup fresh strawberries hulled
  • 1.5 cups milk dairy or plant-based
  • 0.33 cup chia seeds
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1 pinch salt
Toppings
  • fresh strawberries sliced
  • granola
  • maple syrup optional, for drizzling

Method
 

  1. Place fresh strawberries, milk, maple syrup, vanilla extract, and salt in a blender. Blend on high speed until completely smooth and pink, about 30-45 seconds.
  2. Pour the strawberry milk mixture into a large bowl. Add chia seeds and whisk thoroughly for 30 seconds to evenly distribute and prevent clumping.
  3. Let the mixture sit for 5 minutes, then whisk again vigorously to break up any clumps that formed.
  4. Cover the container and refrigerate for at least 4 hours or overnight until chia seeds absorb liquid and create a thick pudding consistency.
  5. After pudding has set, stir well to ensure uniform texture. Add a splash of milk if too thick.
  6. Divide strawberry chia pudding into serving glasses or jars.
  7. Top each serving with fresh sliced strawberries arranged attractively.
  8. Add granola for crunch and drizzle with additional maple syrup if desired. Serve immediately or refrigerate for up to 5 days.

Notes

Store pudding and toppings separately for best results. Add granola just before serving to maintain crunch. Pudding may thicken over time; simply stir in more milk to adjust consistency. Works great with any plant-based milk.
