Ingredients
  

Salad
  • 2 large mangoes firm-ripe (yellow but firm)
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup fresh mint torn
  • 1 small red shallot thinly sliced
  • 2 tbsp roasted peanuts crushed
Dressing
  • 3 tbsp lime juice freshly squeezed
  • 2 tbsp fish sauce or soy sauce for vegan
  • 1 tbsp palm sugar or brown sugar
  • 1 tsp chili flakes adjust to taste
  • 1 clove garlic minced

Equipment

  • Julienne peeler or sharp knife
  • Large mixing bowl
  • Whisk

Method
 

  1. Peel the mangoes and use a julienne peeler or knife to cut the flesh into long, thin strips.
  2. Place mango strips in a large bowl with sliced shallots, cilantro, and mint.
  3. In a separate small jar, whisk together lime juice, fish sauce, sugar, garlic, and chili flakes until sugar dissolves.
  4. Pour the dressing over the salad and toss gently to coat.
  5. Top with crushed peanuts just before serving.

Notes

Choose mangoes that are yellow but still firm to the touch for the best texture. If using green mangoes, increase the sugar slightly.
