Ingredients
  

Burger Patties
  • 2 medium sweet potatoes peeled and cubed
  • 1 cup red lentils dried
  • 1 cup rolled oats
  • 1 tsp cumin ground
  • 2 tsp smoked paprika
Avocado Crema
  • 1 large avocado ripe
  • 0.25 cup Greek yogurt plain
  • 1 lime juiced
Assembly
  • 4 brioche buns toasted
  • 0.5 cup red onion diced
  • 0.25 cup cilantro chopped

Method
 

  1. Boil sweet potatoes and lentils in vegetable broth for 15-20 mins until soft. Drain well.
  2. Mash the potato-lentil mixture in a bowl. Stir in oats, cumin, paprika, salt, and pepper.
  3. Let mixture sit for 10 minutes, then form into 4 thick patties.
  4. Heat oil in a skillet over medium-high heat. Fry patties for 4-5 mins per side until golden brown.
  5. Blend avocado, yogurt, lime juice, and garlic until smooth to make the crema.
  6. Toast buns. Assemble burgers with a generous layer of crema, the patty, and top with diced red onion and cilantro.

Notes

Ensure the lentil mixture is well-drained before mixing to prevent soggy patties. Patties can be frozen before cooking.
