Spicy Sesame Chicken Zoodle Bowls

Ingredients
  

Chicken
  • 1 lb chicken breast cubed
  • 1 tbsp cornstarch optional
  • 1 tbsp oil avocado or olive
Sauce
  • 0.25 cup soy sauce low sodium
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil toasted
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tsp sriracha optional
Base & Garnish
  • 3 zucchinis medium, spiralized
  • 2 green onions sliced
  • 1 tbsp sesame seeds

Equipment

  • Spiralizer or Julienne Peeler
  • Large skillet or wok
  • Tongs
  • Whisk

Method
 

  1. Whisk together soy sauce, hoisin, sesame oil, garlic, ginger, and sriracha in a small bowl.
  2. Spiralize the zucchinis into noodles and set aside on a paper towel.
  3. Toss cubed chicken with cornstarch, salt, and pepper.
  4. Heat oil in a large skillet over medium-high heat. Add chicken and sear for 5-6 minutes until cooked through and golden.
  5. Pour the sauce over the chicken and let it bubble for 30 seconds.
  6. Add the zucchini noodles to the pan and toss with tongs for 1-2 minutes just to warm through (do not overcook).
  7. Remove from heat immediately. Garnish with green onions and sesame seeds before serving.

Notes

Do not salt the zucchini noodles before cooking unless you plan to rinse and dry them thoroughly, as salt draws out moisture and can make the sauce watery.
