Ingredients
  

Crispy Rice
  • 2 cups cooked sushi rice
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp salt
  • oil for frying
Spicy Salmon Topping
  • 8 oz sushi-grade salmon finely chopped
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1 green onion minced
  • 1 tsp sesame seeds
  • 1 small avocado diced
Garnish
  • jalapeño slices
  • extra sesame seeds
  • soy glaze optional

Equipment

  • Mixing bowls

Method
 

  1. Cook sushi rice and season with vinegar, sugar, and salt.
  2. Press rice into a lined dish and chill for 2 hours.
  3. Cut rice into small squares.
  4. Fry pieces in oil until golden and crispy.
  5. Combine salmon, mayo, sriracha, soy sauce, sesame oil, onions, and sesame seeds.
  6. Fold diced avocado into salmon mixture.
  7. Top each crispy rice piece with spicy salmon.
  8. Garnish with jalapeño slices and sesame seeds.

Notes

Best served immediately to keep rice crispy. Always use sushi-grade salmon for raw preparations.
