Method
- Boil eggs for 6.5 minutes, then transfer to an ice bath. Peel, slice in half, and set aside.
- Heat oil in a large pot over medium heat. Sauté garlic and ginger for 30 seconds until fragrant.
- Add red curry paste and cook for 1-2 minutes until slightly darkened and aromatic.
- Whisk in chicken broth, coconut milk, fish sauce, soy sauce, and brown sugar. Bring to a simmer.
- Reduce heat to low, add shredded chicken, and simmer gently for 10-15 minutes.
- In a separate pot, cook noodles according to package directions. Drain well.
- Divide cooked noodles into serving bowls. Ladle the hot chicken and curry broth over the noodles.
- Garnish with bean sprouts, fresh cilantro, soft-boiled egg halves, and serve with lime wedges.
Notes
Always store leftover noodles separately from the broth to prevent them from becoming mushy. Broth can be frozen for up to 3 months.
