- Drain the feta cheese and pat dry. Slice into 1/2-inch to 1-inch cubes and place them in a heat-proof jar or serving bowl.
- In a small saucepan, combine the olive oil, smashed garlic, oregano, thyme, red pepper flakes, and peppercorns.
- Heat over medium-low heat for 3-5 minutes gently. The oil should be warm and fragrant, with small bubbles around the garlic, but not boiling.
- Remove from heat and carefully pour the warm oil mixture over the feta cubes, ensuring they are submerged.
- Let cool to room temperature, then cover and refrigerate for at least 2 hours to let flavors meld. (Can be eaten immediately, but better marinated).
- Remove from refrigerator 30-60 minutes before serving to allow the oil to liquefy. Serve with toasted crusty bread.
Notes
Always use block feta in brine, not pre-crumbled cheese. Due to the fresh garlic, store refrigerated and consume within 1 week. The oil will solidify in the fridge; this is normal.
