Spicy Garlic Butter Herb Shrimp

Ingredients
  

Rice
  • 1 cup white rice Jasmine or Basmati
  • 2 cups water or chicken broth
Shrimp & Sauce
  • 1.5 lbs large shrimp peeled and deveined
  • 4 tbsp unsalted butter divided
  • 3 tbsp olive oil
  • 6 cloves garlic minced
  • 0.5 tsp red pepper flakes plus more for garnish
  • 1 tsp paprika
  • 0.25 cup chicken broth or white wine for deglazing
  • 2 tbsp lemon juice freshly squeezed
  • 0.33 cup fresh parsley chopped

Method
 

  1. Cook the rice with water and a pinch of salt according to package instructions. Fluff with a fork when done.
  2. Pat shrimp completely dry with paper towels. Season with salt, pepper, and paprika.
  3. Heat olive oil and 2 tbsp butter in a large skillet over medium heat. Add red pepper flakes.
  4. Add shrimp in a single layer and sear for 1-2 minutes per side until pink. Remove shrimp from pan.
  5. Add remaining butter and minced garlic to the pan. Sauté for 1 minute. Deglaze with broth/wine.
  6. Stir in lemon juice and half the parsley. Return shrimp to pan and toss to coat.
  7. Serve shrimp over rice, spooning the extra sauce over everything. Garnish with remaining herbs.

Notes

Do not overcook the shrimp or they will become rubbery. Ensure shrimp are dry before cooking to get a good sear.
