Ingredients
  

Potatoes
  • 2 lbs Russet potatoes washed and cubed
  • 3 tbsp olive oil
Cajun Spice Blend
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 0.5 tsp cayenne pepper adjust to taste
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash the potatoes and cut them into uniform 1-inch cubes. Dry them thoroughly with a paper towel.
  3. In a small bowl, mix together paprika, garlic powder, onion powder, oregano, thyme, cayenne, salt, and pepper.
  4. Place potatoes in a large bowl. Drizzle with olive oil and toss to coat evenly.
  5. Sprinkle the spice mixture over the potatoes and toss again until well coated.
  6. Spread potatoes in a single layer on the baking sheet. Do not overcrowd.
  7. Roast for 30-35 minutes, flipping halfway through, until fork-tender and crispy.
  8. Serve hot with a side of dipping sauce if desired.

Notes

For extra crispiness, soak the cut potatoes in cold water for 30 minutes, then drain and dry thoroughly before oiling.
